Gin Eva Old Tom - Back to the Roots
Soft, mild gin matured in red wine barrels.
This distillate is a tribute to the 19th century Gin style. The Signature GinEva was barreled for several month in old wine casks, which have been previously filled with Mallorcan red wine.

The Old Tom has a nice amber colour, wood and fruit are a perfect symbiosis, carried by 20 g/l of residual sugar. A great, tasty gin to drink neat and that also harmonises perfectly with red vermouth and Angostura bitters.
To ensure that the aromas of the ingredients can be optimally extracted and absorbed by the alcohol, Eva and Stefan, a Catalan oenologist and a German winemaker, first macerate the ingredients in their distillery in Llucmajor (Mallorca).
Then they distil the macerate in their distillery in a traditional copper still.
