Olives have a long tradition as a cocktail garnish, maybe because their salty brine aroma contributes well to a Dry Martini. And a Martini is what Eva and Stefan had in mind distilling this Gin.
To ensure that the aromas and essential oils of the ingredients can be optimally extracted and absorbed by the alcohol, Eva and Stefan, a Catalan oenologist and a German winemaker, first macerate the ingredients in their distillery in Llucmajor (Mallorca).
Then they distil the macerate in their distillery in a traditional copper still.
